Recipe: Peanut Butter Banana Dog Treats

Our fur family and friends deserve a little treat now and then for the joy they give us on a daily basis. My little girl LOVES these treats! I bought my cookie cutters online - they come in the shape of a bone, a doghouse, a heart, a pawprint and fire hydrant. Adorable!

Recipe: Homemade Pico de Gallo

A perfect addition to any of the Mexican dishes you might serve your family. Basically its an uncooked, fresh salsa. You can turn the heat up or down depending on the peppers you add while creating it. If you like things a little mild, use jalapenos with no seeds or pith. Turn up the by choosing Serrano peppers...don't say I didn't warn you though  :)

Recipe: Java Fajitas

I'm always looking for new ways to cook up old favorites. The addition of coffee in this recipe makes for a wonderful deep flavor to the beef as well as in the sauce. For those of you wondering if the coffee taste is overpowering the answer is no -- it simply enhances the flavor of the other ingredients.

Recipe: Sweet Pickle Relish - One Jar at a Time

For the last week or so I've been concentrating on testing out recipes that allow me to pickle or preserve some of my favorite things one jar at a time. My latest attempt was a recipe for sweet pickle relish I found online at food.com. It has got to be my favorite "one jar" recipe. This makes one pint of the most wonderful homemade relish you will have tasted anywhere. I dare you to go back to store bought brands.

Recipe: Tomato Cheese Macaroni Casserole

Tomato Cheese Macaroni Casserole - or as we called it when the kids were young -- our go-to meal before payday. We've all had those days where we scratch our heads wondering what to make out of the scant pantry offerings that stare us in the face just before the next paycheck.  This was one of our favorites -- simple, but hearty. If you want, you could add crumbled ground beef or sausage, but its also delicious just as it is. And simple too!

Recipe: Lemon Basil Chicken with Pasta

I found this recipe on Taste of Home, and I instantly had to give it a go because it had three of my favorite food items in its title -- Lemon, Basil and Chicken. It proved to be an instant keeper in our house. It was quick to pull together too and light enough for a Summer meal. The addition of basil and lemon thyme from my garden proved to be the icing on the cake!

I love corn on the cob in the summer, but tonight I wanted to try something a little different with them, other than the grill or boil then slather with butter method we're used to doing. This recipe for Grilled Mexican Street Corn kicked things up a notch!

Who knew that making jam doesn't have to involve specialized equipment, complicated recipes and instructions and could taste better in a few minutes than anything you could buy off your supermarket shelf?  Two ingredients (three if you like) and no pectin. Recipe: Oven Pork Carnitas

I had a couple of packages of boneless country pork ribs and I wanted to do something different with them. I love how easy this recipe is -- it tastes like you've been cooking it all day, and yet it's only been a couple of hours. A great alternative to regular taco filling.
