Recipe: Texas Potatoes

This recipe is from a very old and faded family cookbook. I'm not sure exactly why they're called Texas potatoes, but they are very easy to throw together, and taste wonderful. A great side for a family dinner, or a brunch buffet offering.  There are a million and one ways to change them up. Add cheese. Jalapenos or other peppers, sausage crumbles or do like I did and make them just as the recipe says.
