BBQ Beef Brisket Rolls

2 rolls/pkg of prepared crescent rolls
2 cups cooked brisket, shredded or cut into thin strips
2 small sweet peppers, thinly sliced into strips
1/2 onion,thinly sliced
1/2 cup of your favorite BBQ sauce - I used HEB's Specialty Series - Kansas City

Preheat oven to 350 and prepare cookie sheet by spraying with Pam.

Unroll crescent roll dough, and piece together two at a time, making a rectangle.

Combine remaining ingredients in a bowl and place a couple of tablespoons on mixture on each dough rectangle. Roll from the top down, closing in the sides by pinching the dough as you go.

Bake for 15 minutes. Store the unused portions (after baking) in the fridge. They're great heated up later, for a quick lunch or after school snack.
